What is a Squat Lobster? They are among the
smallest lobster in the world. Obtained
primarily from the Pacific coastal waters off El
Salvador, Their numbers are bountiful, allowing
for the product to be marketed year round. Very
versatile, this rich sweet morsel of pure
lobster tail meat can be prepared in a wide
variety of ways - sautéed, fried, boiled
or poached.

The criteria for any dish is great taste.

pasta dishes, salads and soups, as well as an
hors'doeuvre or to garnish their entrees. A true
member of the lobster family, squat lobsters are
an affordable alternative to higher priced
shellfish, and can be used as a substitute in
any recipe that calls for lobster, shrimp, or
crab.

right from the frozen state.
As a fried hors'doeuvre or a side
addition to any meal,simply deep fry the frozen
squat lobster nuggets as is, or bread the frozen
nuggets using your special breader. Deep fry
until golden brown and then serve with your
favorite sauce, a cocktail sauce or an oriental
mustard sauce. If using Tempura, reblanch the
nuggets or semi-defrost, but do not thaw
completely, before dipping into dry flour and
then the batter - process may be repeated.
When sautéing, toss frozen
nuggets into a hot pan and season. Remove when
light brown and add to final dish.
To poach, place thawed squat lobster
meat, not the nugget form, in a pot, cover with
water and bring to a boil. Remove immediately.
Do not overcook. To poach nuggets, fill pot
partially with water and begin heating. Before
it boils, add frozen nuggets. Bring to a boil,
remove and chill. For a stew or bouillabaisse,
drop the frozen nuggets in just minutes before
serving.
When microwaving, distribute the
frozen nuggets evenly on a plate and cover
loosely with a plastic wrap. Cook 1 to 3 minutes
on high - time varies depending on the
microwave's strength. Remove and serve with
entree.
